I made this tasty dish for dinner tonight. Chick peas, garlic, spinach and orange peppers in a pita with roasted cauliflower. Both were topped with nutritional yeast “cheese” sauce.   I had no plan when I started this… it sorta just came together.

I find it funny that people love to complain about vegans.  ”Know how to tell if someone is vegan?  Don’t worry, they’ll tell you.”  Ughhhhh, come on.  Sorry if you find my willpower annoying.

What’s worse… a person who choses a life of compassion or the ones who chose to ridicule them?

I imagine that the omnivores that love ridiculing us genuinely believe we are crazy for living a life different than their own.  You know what you call that?  Bigotry.  They are no better than racists or homophobes.

Plants and Animals’ monthly vegan dinner, Chomp!, was tonight, and it was Thai night! Heck yes! We had rice noodles with some kind of peanut sauce, curry vegetables, spring rolls, and mango sticky rice. Delicious!

Also, it was nice to see my friend Daniel behind the bar (impromptu barbacking) at the Speakeasy! I had a delicious gin drink with bitters, tonic, and raspberry. Then I had a beer. Feels good.

The Sea Shepherds were raffling off a ticket to a sweet event next week, which I didn’t win, despite the Denver Seitan Company dudes giving me their raffle tickets. Ah well. I got a Sea Shepherds button as a consolation prize, and I also got a sweet Nooch Vegan Market sticker. It was a fun night, and now it’s time for cashew ice cream!

I was there with my wife and new friends tonight.  My wife won the Sea Shepherds event tickets.  We were in the other room eating and couldn’t hear what was being given away.  It was quite the surprise.  We were already planning on going.  The food was quite tasty.  Hopefully next month they can find a bigger place or get more tables.  I suppose that’s a good problem to have.

As easy as it would be, I can’t imagine giving up on veganism.  Some days are harder than others, but I just can’t fathom saying to myself, “A steak sounds good, I guess I’m okay with murder again.”

Today we did some wandering, and visited the Vance Kirkland Museum and then ate lunch at Sub Culture. We both had the Asian salad with tempeh, which basically consists of lettuce, roasted red peppers, carrots, pickles, tomatoes, and tempeh, of course. The salads were GIANT and came with a ton of tempeh, which was awesome. 

Just so you know, they deliver as well and they have good vegan options for sandwiches. They have Daiya, vegenaise, vegan cream cheese, and other special vegan things to make us happy. I’m a fan of the Alps sandwich, which has lots of big slices of marinated portobellos. Make sure they know your order is vegan, though, and it’s not a bad idea to have it repeated back to you.

Good drink deals too!

We’ve walked by this place but never remembered to check the menu.  Ahhhh we totally live in the delivery zone!  Hooray!

Went to the Neat Market yesterday.  It was awesome per usual.  Finally made it early enough to get some Sicilian Denver Seitan before they sold out.  I also picked up some vegan cheesecake and teriyaki pineapple jerky. The jerky was so good, but they didn’t really give me much.  I need to learn to make that.  I was bummed that the Nooch table didn’t have any Teese cheese as promised.  

Later that day I used the seitan in a spaghetti sauce… it was delicious.  I think I’ll be buying that regularly from them now.

Went to Sweet Action yesterday and got this delicious treat…. Brown sugar vegan ice cream between two vegan oatmeal raisin cookies.  So unbelievably good.

Bethany and I saw Jeff Who Lives at Home at the Landmark Mayan today.  The theater was great, it was really old with a lot of character.  After the movie we walked over to Sweet Action Ice Cream.  If you visit Denver, go there.  I sampled oatmeal raisin and ended up with a double scoop of strawberry vegan ice cream.  It was made with a coconut milk base… so creamy and delicious.  Check out all the awesome art they had up.  I’ll for sure be getting a vegan ice cream sandwiches next time we go.  

BBQ tempeh, mashed potatoes with steamed carrots and kale.
I marinated the tempeh, fried it and then basted it the marinade and baked it.  The mashed potatoes were made with earth balance, soy milk, nutritional yeast, salt and pepper.  
This was so tasty and comfort food-tastic.
